The carrot is a biennial root vegetable grown as an annual in kitchen gardens. Cultivated forms are typically orange due to high beta-carotene content, though heirloom varieties range from white and yellow to red, purple, and black. In its first year it produces the edible taproot; in the second it bolts to flower and seed.

Preparation

Propagation

Harvest notes
- -Pull when roots reach usable size - they can be left in the ground and harvested as needed
- -Harvest before heavy frosts unless protecting in-ground roots with straw

- -Twist foliage off cleanly rather than cutting to reduce moisture loss during storage
Storage tips

Varieties
Short, stump-rooted variety with broad shoulders tapering to a blunt point, typically 10-12 cm. Well suited to heavy, stony, or shallow soils where longer varieties fork or fail. Good flavour and stores well.
Nantes-type variety bred by Tozer Seeds for significantly reduced carrot fly attractiveness. Emits lower levels of the volatile compounds that draw carrot fly. Not fully immune but performs noticeably better in affected plots without the need for netting.

A fungal disease that causes dark lesions on carrot foliage, weakening plants and reducing root development. More common in warm, wet summers and where crops are sown densely.
Root rot
Fungal diseaseFungal decay of carrot roots caused by waterlogging or soil pathogens, particularly in heavy, poorly drained soils. Affected roots may be soft, discoloured, or malformed.
Wilting
EnvironmentalPlants are drooping or losing vigour. Most commonly caused by water stress but can also indicate root damage, vascular disease, or heat scorch. Identifying the cause quickly is important as some causes are serious.
Poor germination

Yellowing leaves

Chewing damage
