Romanesco

Romanesco is a visually stunning brassica with lime-green, spiralling fractal heads and a nutty, sweeter flavour than standard calabrese. It is technically a broccoli-cauliflower intermediate and requires similar growing conditions - fertile soil and consistent moisture. Best harvested when the head is tight and fully formed.
